The influence of the Larzac plateau

The estate is located in the Terrasses du Larzac area, 30 minutes northwest of Montpellier. This terroir benefits from a Mediterranean climate tempered by the cool Tramontane wind coming from the Larzac plateau, at the foot of our location. In summer, the temperature difference between day and night allows us to wait for full ripeness without sacrificing freshness.

These terraces , where we carried out nearly 60 soil pits upon our arrival, are composed of several soil types generally described as clay-limestone.

The rocks present on the estate include:
– Glacial terraces with mixed materials: limestone, sandstone, quartz, lydian stone, porphyry, and weathered basalt
– Clay marls of Fontcaude / yellow marls of Gignac
– Oncolitic limestone / sandstone / Montpellier clays
– White lacustrine limestone of Planobres

Our approach.

We do not see Salente as a vineyard, but as a farm. It is a complex organism that can be compared to a human body, with different organs all functioning together. For harmony to be expressed in our wines, we believe that each organ must work in balance with the others: the vines, the fruit trees, the animals, the flowering meadows, and the hedgerows that we gradually plant year after year. We believe that spraying biodynamic preparations and respecting biodynamic cycles will help us achieve this balance.

We farm according to the principles of organic and biodynamic agriculture. We limit competition from grass beneath the vine rows by hilling up and removing soil around the vines with the help of our Percheron horse, Harribo. After harvest, we sow cover crops to help improve soil structure and increase organic matter. We practice gentle pruning, shoot thinning, and green harvesting when necessary.

We now have 4 hectares of vineyards. The 2 hectares of white grape varieties were planted in 2025 and 2026 and will give rise to new wines.

Harvest.

The culmination of a year work is an intense moment — one of focus, doubt, joy, and togetherness.

We harvest each block by hand, early in the morning, sometimes by headlamp. The grapes are transported in a small vibrating trailer to the cellar.
